Ingredients

4 cups or 1 recipe of Marinara Sauce

Nonstick cooking spray

1 tbsp olive oil

1 lb (four 4-oz) chicken breasts, boneless, skinned

12 cup chopped onion

12 cup chopped celery

14 cup low-sodium chicken broth

2 tbsp white cooking wine

12 tsp oregano

12 tsp basil

8 oz whole-wheat fettuccine pasta, cooked according to directions without salt or fat

12 cup shredded, low-fat mozzarella cheese

Directions

1. Prepare Marinara Sauce recipe according to directions. Heat in a saucepan and keep warm.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat add olive oil. When hot, add chicken. Cook 3 to 4 minutes on each side until browned.

3. Add onion, celery, and chicken broth.

4. Reduce heat to low and add wine, oregano, and basil. Cover. Simmer for 15 to 20 minutes.

5. Add marinara sauce to the skillet and heat through.

6. Serve over hot pasta and top each serving with cheese.

Makes 4 servings.
