1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil.
2. When hot, add onions, pepper, and mushrooms. Sauté for 2 to 3 minutes or until mushrooms are tender.
3. Add egg substitute and stir mixture continuously for 2 to 3 minutes or until cooked.
4. Remove from heat and top with cheese.
