Ingredients

12 cup seasoned bread crumbs

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 12 lb (four 6-oz) chicken breasts, boneless, skinned

1 egg white

Nonstick cooking spray

12 cup orange juice

12 cup low-sugar orange marmalade

2 tsp cornstarch

1 cup low-sodium chicken broth

1 cup couscous, uncooked

Directions

Preheat oven to 375°F.

1. In a shallow bowl, combine the bread crumbs and salt-free seasoning. Set aside.

2. In another shallow bowl, add egg white.

3. Dip chicken breasts in the egg white and then in the bread crumbs. Spray a medium-size baking dish with nonstick cooking spray. Place chicken breasts in dish.

4. Lightly spray the tops of the breaded chicken breasts with cooking spray. Bake for 30 to 35 minutes.

5. Meanwhile, in a small saucepan over medium heat add the orange juice, marmalade, and cornstarch. Stir with a wire whisk for 2 to 3 minutes until thickened. Set aside and keep warm.

6. In a small saucepan bring the chicken broth to a boil. Add couscous and remove from heat. Cover and let sit for 5 minutes. Fluff and stir couscous with a fork.

7. Spoon orange sauce over baked chicken breasts and serve with hot couscous.
