Ingredients

12 lb grape tomatoes, sliced in half lengthwise

8 oz fresh mozzarella cheese, cut into 12-inch by 12-inch cubes

1 cup dried orzo

14 cup chopped fresh basil

2 TBS balsamic vinegar

14 tsp salt

14 tsp pepper

1 TBS extra virgin olive oil

Directions

1. Boil orzo per package instructions. Once orzo is ready, drain it and return to pot.

2. While still warm, add salt, pepper, oil, and balsamic vinegar, and stir to coat orzo. Add tomatoes and basil and stir to combine.

3. Allow orzo to cool for another 5 minutes and then add the mozzarella cubes, stirring one last time to combine. Serve warm or chilled.
