Ingredients

6 cups red potatoes, cut into 1-inch pieces

1 tbsp olive oil

1 tbsp dried parsley

12 tsp salt

Nonstick cooking spray

Directions

Preheat oven to 375°F.

1. In a large bowl combine the potato pieces, olive oil, parsley, and salt.

Mix well.

2. Spray a large baking pan with nonstick cooking spray.

3. Pour the potato pieces out onto the baking pan and separate them so they are not touching each other.

4. Bake for 45 minutes. Remove with a spatula and serve immediately.
