Ingredients

8 oz uncooked rice noodles

14 cup reduced-sodium soy sauce

1 tbsp brown sugar

3 tbsp lime juice

14 tsp red pepper flakes

1 tsp cornstarch

2 tsp grated fresh ginger

14 tsp paprika

Nonstick cooking spray

1 tbsp canola oil

8 green onions, sliced, tops included, divided

2 garlic cloves, minced

12 cup sliced red bell pepper

12 cup sliced celery

1 cup snow peas, sliced in half diagonally

1 (14-oz) container extra-firm tofu, cut in 34-inch cubes

12 cup egg substitute

2 cups bean sprouts

12 cup grated carrots

1 cup chopped fresh cilantro, divided

13 cup cashew pieces

Directions

1. In a large pot, over high heat, bring 2 quarts of water to a boil. Remove from heat and add rice noodles. Let sit 8 to 10 minutes, stirring often. Drain noodles.

2. In a small bowl combine soy sauce, brown sugar, lime juice, pepper flakes, cornstarch, ginger, and paprika. Set aside.

3. Spray a large skillet with nonstick cooking spray. Place skillet over medium-high heat and add canola oil. When oil is hot, add 4 green onions, garlic, bell pepper, celery, and snow peas. Stir-fry 1 to 2 minutes. Add tofu pieces and stir-fry 1 to 2 minutes. Add egg substitute in the center of the skillet and stir continually for about half a minute.

4. Add half the noodles to the skillet with the soy sauce mixture. Toss to mix well. Add remaining noodles and mix. Cook 2 minutes to thicken and heat through.

5. Add bean sprouts, carrots, 12 cup cilantro, and cashew pieces. Toss with noodle mixture and top with remaining onions and cilantro.
