Ingredients

Recipe for Baked Yam Medley

2 oz (12 cup) pecans, finely chopped

14 cup Parmesan cheese

12 tsp oregano

12 tsp thyme

14 tsp salt

Nonstick cooking spray

1 tbsp canola oil

1 lb turkey breast cutlets

14 cup chopped fresh parsley

Directions

1. Prepare Baked Yam Medley recipe according to directions.

2. Meanwhile, in a shallow bowl combine the pecans, cheese, oregano, thyme, and salt. Mix well.

3. Press the turkey cutlets in the pecan mixture to coat both sides.

4. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add turkey cutlets and cook 5 minutes on each side or until cooked through.

5. Top turkey cutlets with parsley and serve with baked yams.

Makes 4 servings.
