Ingredients

Nonstick cooking spray

2 tsp olive oil

2 cups sliced red onion

4 garlic cloves, minced

1 cup sliced sun-dried tomatoes

2 cups broccoli florets, sliced in half

14 cup water

1 (13 34-oz) can artichoke hearts, water packed, drained, and sliced

1 15-oz can low-sodium garbanzo beans, drained

2 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp salt

8 oz whole-wheat penne pasta, cooked according to directions without salt or fat

14 cup Parmesan cheese

14 cup fresh basil leaves

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add onion and garlic. Sauté 2 to 3 minutes.

2. Add sun-dried tomatoes, broccoli, and water. Cover. Cook 2 to 3 minutes or until broccoli is tender.

3. Add artichoke hearts, garbanzo beans, salt-free seasoning, salt, and hot penne. Stir 2 minutes to heat through.

4. Top with cheese and basil leaves.
