Ingredients

12 cup orange juice

1 12 tbsp brown sugar

1 tbsp grated fresh ginger

2 tsp cornstarch

Nonstick cooking spray

2 tsp canola oil

1 lb boneless, lean pork chops, 12-inch thick

2 apples, peeled and thinly sliced

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a small bowl combine the orange juice, sugar, ginger, and cornstarch. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add pork chops and cook 3 to 4 minutes on each side to brown.

3. Add apples around the pork chops and pour the orange juice mixture over the apples. Cover. Reduce heat to low and cook for 6 to 8 minutes. Serve over hot rice.

Makes 4 servings.
