Ingredients

Nonstick cooking spray

1 lb boneless, lean pork loin chops, 12-inch thick

1 (12-oz) can evaporated skim milk

2 tbsp flour

1 tsp onion powder

1 tsp parsley

12 tsp thyme

1 tsp oregano

12 tsp salt

1 tsp olive oil

2 garlic cloves, minced

8 green onions, sliced, tops included, divided

8 oz whole-wheat penne pasta, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add pork chops. Cook 5 minutes on each side or until cooked through. Transfer to a plate. Set aside, cover, and keep warm.

2. In a large bowl, combine milk, flour, onion powder, parsley, thyme, oregano, and salt. Mix well and set aside.

3. Add olive oil to the skillet after removing the pork chops and, when oil is hot, add garlic and 4 sliced onions. Sauté 1 minute.

4. Add milk mixture and stir with a wire whisk for 2 to 4 minutes or until thickened.

5. Add pork chops back to the skillet and stir 1 minute to heat through.

6. Serve pork chops with herb sauce over hot pasta. Top with remaining sliced onions.

Makes 4 servings.
