Ingredients

Nonstick cooking spray

2 tsp canola oil, divided

34 lb boneless, lean pork chops, 12-inch thick (cut into 12-inch pieces)

6 sliced green onions, tops included

4 minced garlic cloves

12 cup sliced celery

2 cups sliced mushrooms

12 cup egg substitute

12 cup chopped carrots

1 cup snow peas, sliced in half

12 cup frozen petite green peas

1 tbsp water

3 tbsp reduced-sodium soy sauce

2 tsp grated fresh ginger

1 tbsp brown sugar

1 cup pineapple pieces, drained and cut in half

1 12 cups brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp canola oil. When hot, add pork. Cook 4 to 5 minutes or until cooked through. Transfer pieces to a plate. Set aside and keep warm.

2. Add 1 tsp canola oil to the skillet and when hot, add onions, garlic, and celery. Stir-fry 1 to 2 minutes.

3. Add mushrooms and stir-fry 2 minutes.

4. Move mushrooms to the edge of the skillet and add egg substitute. Stir mixture 1 to 2 minutes continuously until cooked.

5. Add carrots, peas, and water. Cover. Cook for 2 to 3 minutes or until vegetables are tender.

6. Mix in a small bowl the soy sauce, ginger, and sugar. Add to the skillet, along with the pineapple, pork, and rice. Stir and cook 2 to 3 minutes to heat through.
