Ingredients

12 cup (2 oz) hazelnuts, raw

Nonstick cooking spray

1 lb boneless, lean pork loin chops, 12-inch thick

6 cups green beans, trimmed

2 tbsp Dijon mustard

1 tbsp olive oil

14 tsp pepper

14 tsp salt

14 cup diced red bell pepper

1 cup brown rice, cooked according to directions without salt or fat

Directions

Preheat oven to 350°F.

1. In a shallow baking pan, spread hazelnuts in a single layer. Bake for 10 to 12 minutes or until fragrant. Remove from oven and finely chop nuts with a knife or chop in a food processor for 10 to 15 seconds. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add pork chops. Cook 5 minutes on each side or until cooked through. Transfer to a plate and set aside. Cover to keep warm.

3. In a small bowl, combine mustard, olive oil, and pepper. Set aside.

4. Steam green beans until tender and drain well. In a large bowl, combine with mustard mixture and chopped hazelnuts. Mix well.

5. Top pork chops with bell pepper. Serve with green bean mixture and hot brown rice.
