Ingredients

4 cups red potatoes, cut into 1-inch pieces

2 tbsp olive oil, divided

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp salt

Nonstick cooking spray

1 lb boneless, lean pork loin chops, 12-inch thick

6 garlic cloves, minced

3 cups thinly sliced red bell pepper

12 Kalamata olives, pitted, sliced in half

34 cup chopped fresh parsley, divided

1 oz slivered blanched almonds

Directions

Preheat oven to 400°F.

1. In a large bowl, combine potato pieces, 1 tbsp olive oil, 12 tsp salt-free seasoning, and salt. Mix well.

2. Spray a 9 x 13 baking dish with nonstick cooking spray. Pour the potatoes into the dish and bake for 35 to 40 minutes or until tender.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add pork chops. Cook 5 minutes on each side or until cooked through. Transfer to a plate and set aside. Cover and keep warm.

4. Add remaining 1 tbsp olive oil to skillet and when oil is hot, add garlic and bell peppers. Sauté 2 to 3 minutes.

5. Add olives, remaining 12 tsp salt-free seasoning, 12 cup parsley, and almonds. Stir 1 minute to heat through.

6. Serve pork chops with pepper mixture and roasted potatoes. Top both with remaining 14 cup fresh parsley.
