Ingredients

Recipe for Garden Spinach Salad

Nonstick cooking spray

1 lb boneless, lean pork loin chops, 12-inch thick

2 tsp olive oil

12 cup chopped onion

2 garlic cloves, minced

12 cup sliced celery

2 cups sliced mushrooms

3 tomatoes, chopped

12 cup low-sodium beef broth

1 tsp oregano

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp salt

6 Kalamata olives, pitted, sliced in half

14 cup (1 oz) crumbled feta cheese

14 cup chopped fresh parsley

Directions

1. Prepare Garden Spinach Salad recipe according to directions.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add pork chops. Cook 2 to 3 minutes on each side. Transfer pork chops to a plate. Set aside.

3. Add olive oil to the skillet and, when oil is hot, add onion, garlic, and celery. Sauté 1 minute. Add mushrooms and sauté 1 minute.

4. Add tomatoes, broth, oregano, salt-free seasoning, salt, and olives. Add pork chops back to the skillet and bring to a boil. Cover. Reduce heat to simmer and cook 8 to 10 minutes.

5. Serve pork chops with tomato-olive sauce and top with feta cheese and parsley.

Serve garden spinach salad on the side.
