Ingredients

Nonstick cooking spray

2 tsp olive oil

1 lb chicken breasts, boneless, skinless, cut into 1-inch pieces

2 garlic cloves, minced

3 cups sliced mushrooms

3 cups thinly sliced zucchini

1 (14 12-oz) can stewed, sliced tomatoes, no salt added

12 tsp thyme

12 tsp oregano

14 tsp salt

14 tsp pepper

14 cup chopped fresh parsley

1 cup quinoa, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add chicken pieces and cook 3 to 4 minutes or until cooked through. Remove from skillet. Set aside and keep warm.

2. Add garlic and mushrooms and cook 2 to 3 minutes.

3. Add chicken back to the skillet along with the zucchini, tomatoes, thyme, oregano, salt, and pepper. Bring to a boil. Cover. Reduce heat to simmer and cook 5 to 6 minutes or until zucchini is tender.

4. Serve with hot quinoa and top with parsley.
