Ingredients

Recipe for Quick Brown Rice Pilaf

Nonstick cooking spray

2 tsp olive oil

1 lb chicken breasts, boneless, skinless, cut into 1-inch pieces

2 garlic cloves, minced

3 cups sliced mushrooms

3 cups thinly sliced zucchini

1 (14 12-oz) can stewed, sliced tomatoes, no salt added

12 tsp thyme

12 tsp oregano

14 tsp salt

14 tsp pepper

14 cup chopped fresh parsley

Directions

1. Prepare Quick Brown Rice Pilaf recipe according to directions.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add chicken pieces and cook 3 to 4 minutes or until cooked through. Remove from skillet. Set aside and keep warm.

3. Add garlic and mushrooms and cook 2 to 3 minutes.

4. Add chicken back to the skillet along with the zucchini, tomatoes, thyme, oregano, salt, and pepper. Bring to a boil. Cover. Reduce heat to simmer and cook 5 to 6 minutes or until zucchini is tender.

5. Serve with hot quick brown rice pilaf and top with parsley.

Makes 4 servings.
