Ingredients

1 cup diced mango

1 orange, peeled, segmented, and diced

1 cup minced cucumber, seeds removed

8 green onions, chopped, tops included

12 cup diced red bell pepper

2 tsp grated fresh ginger

3 tbsp lime juice

2 tbsp honey

34 cup salsa

14 cup chopped fresh cilantro

Nonstick cooking spray

1 tbsp olive oil

1 12 lb red snapper fillets

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a large bowl, combine mango, orange, cucumber, onions, bell pepper, ginger, lime juice, honey, salsa, and cilantro. Mix well. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. Add snapper fillets and lower heat to medium. Cook on 1 side for 3 minutes or until browned. Turn over and cook 1 to 2 minutes or until fish flakes easily with a fork.

3. Top fillets with mango salsa and serve with hot rice.

Makes 4 servings.
