Ingredients

24 oz baby potatoes, cut into quarters

1 TBS EVOO

12 tsp dried rosemary

14 tsp salt

14 tsp pepper

1 TBS shredded Parmesan

Directions

1. Preheat oven to 400 degrees F.

2. In large mixing bowl, toss potato quarters with olive oil, rosemary, salt, and pepper, making sure potatoes are evenly covered.

3. Cover baking sheet with aluminum foil and spread potatoes evenly across pan. Bake in oven for about 30 minutes, until just beginning to turn brown.

4. Remove from oven (leaving oven on) and sprinkle Parmesan cheese evenly over potatoes. Place pan back into oven and bake for another 5-10 minutes until cheese has melted and potatoes are soft on the interior and browned and crispy on the exterior. Let cool for 10 minutes before serving.
