Ingredients

Recipe for Wild Rice Pilaf

3 tbsp lemon juice

2 tbsp lime juice

2 tbsp olive oil

2 tbsp finely minced onion

2 garlic cloves, minced

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 lb skinless salmon fillets, cut into 1-inch pieces

3 cups button mushrooms

1 12 cups red bell pepper, cut into 1-inch pieces

1 12 cups green bell pepper, cut into 1-inch pieces

Eight 10-inch or 12-inch skewers

Nonstick cooking spray

Directions

1. Prepare Wild Rice Pilaf recipe according to directions.

2. In a large bowl, combine lemon juice, lime juice, olive oil, onion, garlic, and salt-free seasoning. Mix well.

3. Add salmon pieces and toss to coat. Set aside to marinate for 15 minutes.

4. Thread salmon, mushrooms, and bell peppers alternately on skewers.

5. Spray broiler pan rack with nonstick cooking spray and place skewers on rack.

6. Broil 4 to 5 inches from the heat source for 3 minutes per side. Serve salmon kabobs with wild rice pilaf.
