Ingredients

2 (6-oz) cans salmon, without salt, drained

2 cups diced cucumber

14 cup diced red bell pepper

4 sliced green onions

1 (13 34-oz) can artichoke hearts, water packed, drained

14 cup low-fat mayonnaise

14 cup low-fat sour cream

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

8 cups mixed salad greens

1 cup carrot sticks

Directions

1. In a large bowl combine the salmon, cucumber, pepper, onions, artichoke hearts, mayonnaise, sour cream, and salt-free seasoning. Mix well.

2. Divide the mixed greens between 4 large plates and top with salmon mixture. Add carrot sticks on the side.
