Ingredients

Recipe for Zesty Coleslaw

Nonstick cooking spray

1 tbsp olive oil

4 minced garlic cloves

6 cups fresh spinach leaves

1 12 lb (four 6-oz) skinless salmon fillets

12 tsp basil

14 tsp salt

13 cup water

12 cup crumbled feta cheese

2 chopped tomatoes

Directions

1. Prepare Zesty Coleslaw recipe according to directions.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add garlic. Sauté for 1 minute.

3. Add spinach to the skillet and place the salmon fillets on top of the spinach.

4. Sprinkle salmon with basil and salt and pour water over the spinach.

5. Reduce heat to low. Cover and cook 10 to 12 minutes or until salmon flakes easily with fork.

6. Add cheese and tomato on top of the salmon. Cover and cook 1 to 2 more minutes.

7. Remove salmon and spinach with slotted spoon and serve with zesty coleslaw.

Makes 4 servings.
