Ingredients

14 cup low-fat sour cream

1 tbsp red wine vinegar

1 tbsp lemon juice

1 tsp lemon zest

1 tsp sugar

1 tsp dried dill

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

2 (6-oz) cans salmon, without salt, drained

10 Wheat Thins† Reduced-Fat Crackers, crushed

2 egg whites

12 cup nonfat or 1% milk

12 cup finely chopped onion

1 tbsp dried parsley

1 tbsp flour

14 cup sesame seeds

Nonstick cooking spray

1 tbsp canola oil

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a small bowl combine the sour cream, vinegar, lemon juice, lemon zest, sugar, salt-free seasoning, and dill. Mix and set aside.

2. Drain salmon well and flake into a large bowl. Add crushed crackers, egg whites, milk, onion, parsley, and flour. Mix well.

3. Scoop out 8 portions onto a plate using a 14 cup measuring cup. Set aside.

4. Place sesame seeds on another plate and set aside.

5. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. Gently dip each salmon patty in the sesame seeds, coating each side, and place them in the hot skillet.

6. Cook 5 minutes on each side until golden brown and firm.

7. Top each patty with prepared dill sauce and serve with hot rice.
