Ingredients

3 (6-oz) cans salmon, without salt, flaked

1 cup finely chopped onions, divided

1 cup finely chopped green bell pepper, divided

1 tbsp dried parsley

1 tsp onion powder

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend, divided

5 slices whole-wheat bread, cut into small pieces to make bread crumbs

12 cup egg substitute

Nonstick cooking spray

1 12 tbsp canola oil, divided

6 cups shredded green cabbage

14 tsp pepper

Dash salt

14 cup chopped fresh parsley

1 lemon, cut into wedges

Directions

1. In a large bowl, combine salmon, 12 cup onions, 12 cup bell pepper, parsley, onion powder, 12 tsp salt-free seasoning, bread crumbs, and egg substitute. Mix with a spoon or your hands until mixture sticks together. Form into 4 large patties. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tbsp canola oil. When oil is hot, add salmon patties and cook 3 to 4 minutes on each side or until browned.

3. Place another large skillet over medium-high heat and add remaining 12 tbsp canola oil. When oil is hot, add remaining 12 cup onions and 12 cup bell pepper. Cook 1 to 2 minutes.

4. Add the shredded cabbage, pepper, salt, and water. Cover. Reduce heat to medium and cook 8 to 10 minutes or until cabbage is tender.

5. Serve salmon patties over cabbage topped with parsley and lemon wedges on the side.
