Ingredients

Recipe for Marinated Vegetable Salad

Nonstick cooking spray

1 lb (four 4-oz) skinless salmon fillets, 1 inch thick

1 tbsp olive oil

6 chopped green onions

5 tbsp honey mustard

2 tbsp red wine vinegar

2 tbsp honey

2 tbsp chopped red bell pepper

2 tbsp chopped fresh parsley

Directions

Preheat oven to 375°F.

1. Prepare Marinated Vegetable Salad recipe according to directions.

2. Spray a medium-size baking dish with nonstick cooking spray. Place salmon fillets in the dish.

3. In a small bowl combine olive oil, onions, mustard, vinegar, and honey. Mix well and pour over fillets.

4. Bake uncovered 25 to 30 minutes or until salmon flakes easily with a fork. Top fillets with peppers and parsley and serve with marinated vegetable salad.

Makes 4 servings.
