Ingredients

Recipe for Mixed Green Salad

Nonstick cooking spray

1 lb (four 4-oz) skinless salmon fillets, 1-inch thick

2 tbsp olive oil, divided

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

6 green onions, sliced

12 cup diced red bell pepper

14 cup lemon juice

1 tsp lemon zest

1 tbsp Dijon mustard

13 cup reduced-sodium chicken broth

14 tsp sugar

1 tsp tarragon

14 tsp pepper

12 cup chopped fresh parsley

Directions

Preheat oven to 400°F.

1. Prepare Mixed Green Salad recipe according to directions.

2. Spray a medium-size baking dish with nonstick cooking spray. Place the salmon fillets in the dish.

3. Drizzle with 1 tbsp olive oil and sprinkle with salt-free seasoning. Bake uncovered 12 to 16 minutes or until fish flakes easily with a fork.

4. Spray a medium-size skillet with nonstick cooking spray. Place the skillet over medium-high heat and add remaining 1 tbsp olive oil. When oil is hot, add onions and bell pepper. Sauté 1 to 2 minutes.

5. Add lemon juice, lemon zest, mustard, broth, sugar, tarragon, pepper, and parsley. Stir 1 to 2 minutes to heat through.

6. Spoon parsley sauce over fillets and serve with mixed green salad.
