Ingredients

Nonstick cooking spray

1 12 lb (four 6-oz) skinless salmon fillets, 1-inch thick

1 12 tbsp olive oil, divided

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

12 tsp dried dill

4 garlic cloves, minced

1 cup sliced red onion

12 cup sliced red bell pepper

6 cups chopped Swiss chard, stems removed

2 tbsp water

3 tbsp balsamic vinegar

14 cup slivered blanched almonds

1 cup quinoa, cooked according to directions without salt or fat

1 lemon, cut into wedges

Directions

Preheat oven to 400°F.

1. Spray a medium-size baking dish with nonstick cooking spray. Place salmon fillets in the dish.

2. Drizzle with 1 tbsp olive oil and sprinkle with salt-free seasoning and dill. Bake 12 to 16 minutes or until fish flakes easily with a fork.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add remaining 12 tbsp olive oil. When oil is hot, add garlic, onion, and bell pepper. Sauté 1 to 2 minutes.

4. Add Swiss chard and water to the skillet. Cover and cook 4 to 5 minutes or until chard is tender.

5. Serve salmon fillets with hot quinoa and Swiss chard topped with almonds. Serve lemon wedges on the side.
