Ingredients

2 tbsp reduced-sodium soy sauce

1 tbsp lemon juice

1 tbsp cider vinegar

3 tbsp sugar

2 tbsp tomato ketchup

1 tbsp water

1 tsp cornstarch

1 12 lb (four 6-oz) skinless salmon fillets, 1-inch thick

Nonstick cooking spray

2 tsp canola oil

1 cup thinly sliced onions

1 cup thinly sliced red bell pepper

1 cup thinly sliced green bell pepper

1 14 cups brown rice, cooked according to directions without salt or fat

Directions

1. In a small bowl, combine soy sauce, lemon juice, vinegar, sugar, tomato ketchup, water, and cornstarch. Set aside.

2. Spray a broiler pan with nonstick cooking spray. Place the salmon fillets on the pan. Broil 5 to 6 inches from the heat source, 5 minutes per side.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When oil is hot, add onions and bell peppers. Stir-fry 2 to 3 minutes.

4. Add prepared soy sauce mixture to the skillet and stir 1 to 2 minutes until thickened and heated through.

5. Spoon pepper mixture over fillets and serve with hot rice.

Makes 4 servings.
