Ingredients

Nonstick cooking spray

34 lb ground beef (10% fat)

1 12 cups chopped onion

4 garlic cloves, minced

1 cup chopped green bell pepper

1 cup frozen, whole-kernel corn

1 (15-oz) can low-sodium kidney beans, drained

1 (8-oz) can tomato sauce, no salt added

1 tsp onion powder

1 tsp chili powder

12 tsp cumin

1 tsp garlic powder

Recipe for Corn Muffins

Directions

Preheat oven to 425°F.

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add ground beef, onion, garlic, and bell pepper. Cook 6 to 8 minutes or until cooked through.

2. Add corn, kidney beans, tomato sauce, onion powder, chili powder, cumin, and garlic powder. Cook 2 minutes. Remove from heat and set aside.

3. Spray a 9 x 9 baking dish with nonstick cooking spray. Pour the beef mixture into the dish and set aside.

4. Prepare Corn Muffins recipe, following directions for steps 1 to 4. Pour corn mixture over the top of the beef mixture in the baking dish. Bake for 25 minutes.

5. Let stand for 5 minutes before serving.

Makes 4 servings.
