Ingredients

Nonstick cooking spray

1 tbsp olive oil

2 cups chopped onion

2 apples, peeled and chopped

2 bananas, sliced and smashed with a fork

2 cups water

1 cup uncooked lentils

1 tsp brown sugar

1 tsp curry powder

12 tsp cumin

14 cup raisins

1 cup brown rice, cooked according to directions without salt or fat

8 dried apricots, chopped

14 cup dry-roasted peanuts

2 tbsp chopped fresh cilantro

Directions

1. Spray a large saucepan with nonstick cooking spray. Place the saucepan over medium-hgh heat and add olive oil. When oil is hot, add onion and cook 1 minute.

2. Add apples, bananas, water, lentils, sugar, curry powder, cumin, and raisins. Bring to a boil. Cover. Reduce heat to simmer and cook 30 to 35 minutes or until lentils are tender.

3. Serve over hot brown rice and top with apricots, peanuts, and cilantro.

Makes 4 servings.
