Ingredients

Nonstick cooking spray

1 lb boneless, lean pork loin chops, 12-inch thick

2 cups onions, cut into 1-inch pieces

2 cups celery, cut into 1-inch pieces

1 cup low-sodium beef broth

2 cups carrots, cut into 1-inch pieces

5 cups russet potatoes, peeled, cut into 1-inch pieces

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

1 tsp onion powder

12 tsp thyme

12 tsp salt

14 tsp pepper

14 cup chopped fresh parsley

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add pork chops. Cook 2 to 3 minutes on each side until browned.

2. Add onions, celery, broth, carrots, potatoes, salt-free seasoning, onion powder, thyme, salt, and pepper. Bring to a boil. Cover. Reduce heat to simmer and cook 25 to 30 minutes or until potatoes are tender.

3. Top each serving with parsley.
