Ingredients

Nonstick cooking spray

1 tbsp olive oil

12 cup diced onion

12 cup diced celery

1 cup diced carrots

1 tbsp water

1 lb small scallops

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp salt

14 tsp thyme

1 (13 34-oz) can artichoke hearts, water packed, drained and sliced

34 cup low-fat sour cream

8 oz whole-wheat linguine pasta, cooked according to directions without salt or fat

14 cup Parmesan cheese

14 cup chopped fresh parsley

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add onion and celery. Sauté 1 minute.

2. Add carrots and water. Sauté 1 minute.

3. Add scallops and cook 2 to 4 minutes or until opaque in color.

4. Add salt-free seasoning, salt, thyme, artichoke hearts, and sour cream. Stir 2 to 3 minutes to heat through.

5. Serve over hot pasta and top with cheese and parsley.
