Ingredients

14 cup red cooking wine

2 tbsp reduced-sodium soy sauce

4 minced green onions

2 minced garlic cloves

1 tbsp olive oil

1 tsp oregano

12 tsp basil

1 lb beef sirloin steak, boneless, sliced in 14-inch strips

2 medium portobello mushrooms, sliced in 14-inch strips

Nonstick cooking spray

1 cup quinoa, cooked according to directions without salt or fat

14 cup chopped fresh parsley

Directions

1. In a large bowl combine wine, soy sauce, onions, garlic, olive oil, oregano, and basil. Mix well.

2. Add sirloin strips and mushroom strips. Mix well. Transfer to a large airtight ziplock plastic bag and marinate in the refrigerator for 20 minutes. Turn bag frequently.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat. Using a slotted spoon add half of the beef/mushroom mixture . Cook 4 to 5 minutes or until meat is cooked through.

4. Transfer to a plate. Set aside and keep warm. Cook remaining beef/mushroom mixture, then add both together in the skillet to heat through.

5. Serve over hot quinoa and top with fresh parsley.
