Ingredients

Nonstick cooking spray

1 tbsp canola oil

1 cup thinly sliced red onions

1 lb boneless, lean pork chops, 12-inch thick

14 tsp salt

14 cup balsamic vinegar

12 cup apple juice

1 apple, peeled and thinly sliced

2 tbsp chopped fresh parsley

1 14 cups brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add onions. Sauté for 1 to 2 minutes.

2. Spread the onions to the edge of the skillet. Add the pork chops in the center. Cook 2 to 3 minutes on each side.

3. Sprinkle pork chops with salt and top with vinegar, apple juice, and apple.

4. Reduce heat to low. Cover. Cook for 6 to 8 minutes turning once during cooking time. Top with parsley and serve with hot rice.

Makes 4 servings.
