Ingredients

Nonstick cooking spray

1 tbsp canola oil

8 green onions, sliced, tops included, divided

4 garlic cloves, minced

12 cup chopped green bell pepper

1 cup water

14 cup flour

2 (8-oz) cans tomato sauce, no salt added

1 12 tsp thyme

1 tsp onion powder

12 tsp salt

1 lb red snapper fillets, cut into 1-inch pieces

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When oil is hot, add 4 green onions, garlic, and bell pepper. Cook 1 to 2 minutes.

2. In a small bowl, combine the water and flour and add to the skillet with the tomato sauce, thyme, onion powder, salt, and red snapper. Bring to a boil. Cover. Reduce heat to simmer and cook 6 to 8 minutes or until snapper is firm.

3. Serve over hot brown rice and top with remaining onions.

Makes 4 servings.
