Ingredients

Nonstick cooking spray

3 cups sliced mushrooms

1 lb snapper fillets, cut into 4 pieces

12 finely chopped tomato

6 minced green onions

13 cup low-fat mayonnaise

1 tsp dried dill

8 cups Swiss chard, stems removed, and chopped into bite-size pieces

1 cup quinoa, cooked according to directions without salt or fat

1 lemon, cut into 8 wedges

Directions

Preheat oven to 375°F.

1. Spray a medium-size baking dish with nonstick cooking spray. Place the sliced mushrooms on the bottom of the dish.

2. Lay the snapper over the mushrooms. Set aside.

3. In a small bowl combine the tomato, onions, mayonnaise, and dill. Mix well and spoon over fillets. Cover. Bake for 20 to 25 minutes or until snapper flakes easily with a fork.

4. Meanwhile, in a large pot add Swiss chard and water. Bring to a boil. Cover. Cook for 5 to 7 minutes, stirring often until leaves are tender. Drain well.

5. Serve the snapper fillets with the hot quinoa and Swiss chard. Spoon the mushrooms and sauce from the baking dish over the rice. Add lemon wedges on the side to squeeze over Swiss chard.
