Ingredients

2 (14 12-oz) cans diced tomatoes, no salt added

1 12 cups frozen whole-kernel corn

14 cup salsa

4 tbsp canned diced green chilies, divided

1 lb ground turkey breast

1 cup dry oatmeal

12 cup finely chopped red bell pepper

1 cup shredded zucchini

2 tsp chili powder

1 tsp cumin

1 tsp onion powder

12 tsp salt

Nonstick cooking spray

1 cup brown rice, cooked according to directions without salt or fat

14 cup chopped fresh cilantro

Directions

Preheat oven to 400°F.

1. Place a large saucepan over medium-high heat. Add tomatoes, corn, salsa, and 2 tbsp chilies. Bring to a boil. Cover. Reduce heat to low and simmer for 25 minutes.

2. In a large bowl, combine ground turkey, oatmeal, bell pepper, zucchini, chili powder, cumin, onion powder, salt, and remaining 2 tbsp chilies. Mix well and form into 16 meatballs.

3. Spray a broiler pan with nonstick cooking spray. Place the meatballs on the pan and bake for 20 minutes.

4. Serve meatballs over hot rice. Top with tomato-corn mixture and cilantro.

Makes 4 servings.
