Ingredients

4 cups or 1 recipe of Marinara Sauce

Nonstick cooking spray

1 tsp olive oil

12 cup chopped onion

2 cups sliced mushrooms

1 34 cups nonfat ricotta cheese

1 (10-oz) package frozen chopped spinach, thawed and drained

2 egg whites

1 tsp onion powder

12 tsp garlic powder

1 tsp salt-free Mrs. Dash† Original Blend seasoning

12 manicotti shells, cooked according to directions without salt or fat

12 cup shredded, low-fat mozzarella cheese

14 cup chopped fresh parsley

Directions

Preheat oven to 350°F.

1. Prepare Marinara Sauce recipe according to directions.

2. Spray a large saucepan with nonstick cooking spray. Place the saucepan over medium-high heat and add olive oil. When hot, add onion and sauté 1 minute.

3. Add mushrooms and sauté 2 minutes.

4. Add prepared marinara sauce and simmer over medium-low heat for 10 minutes.

5. In a large bowl, combine ricotta cheese, spinach, egg whites, onion powder, garlic powder, and salt-free seasoning. Mix well.

6. Fill each cooked manicotti shell with cheese mixture. Spray a 9 x 13 baking dish with nonstick cooking spray. Place the shells in the dish.

7. Pour marinara sauce over manicotti shells and top with mozzarella cheese. Bake 30 to 35 minutes. Top with parsley.
