Ingredients

34 lb ground beef (10% fat)

3 green onions, chopped

1 tomato chopped, divided

1 cup chopped fresh spinach leaves

12 tsp thyme

Dash pepper

12 cup crumbled feta cheese

1 cup reduced-sodium chicken broth

1 cup couscous, cooked according to directions without salt or fat

12 (14 12)-oz can low-sodium garbanzo beans, drained

12 cup low-fat sour cream

12 cup diced cucumber

1 tsp lemon juice

12 cup chopped fresh mint, divided

Nonstick cooking spray

Directions

1. In a large bowl, combine ground beef, onions, 12 chopped tomato, spinach, thyme, pepper, and cheese. Mix well and form into 4 patties. Set aside.

2. In a small saucepan, bring broth to a boil and add couscous and garbanzo beans. Cover. Remove from heat and let sit 5 minutes.

3. In a small bowl, combine sour cream, cucumber, lemon juice, and 14 cup mint. Mix and set aside.

4. Spray a large skillet with nonstick cooking spray. Place the skillet over medium heat and add patties. Cook 5 minutes on each side or until cooked through. Patties also can be broiled or grilled.

5. Fluff couscous mixture with a fork and serve with patties. Top with mint sauce and remaining chopped mint.

Makes 4 servings.
