Ingredients

Recipe for Mixed Green Salad

34 lb ground beef (10% fat)

3 green onions, chopped

1 tomato chopped, divided

1 cup chopped fresh spinach leaves

12 tsp thyme

Dash pepper

12 cup crumbled feta cheese

12 cup low-fat sour cream

12 cup diced cucumber

1 tsp lemon juice

12 cup chopped fresh mint, divided

12 (14 12)-oz can low-sodium garbanzo beans, drained

Nonstick cooking spray

Directions

1. Prepare Mixed Green Salad recipe according to directions.

2. In a large bowl, combine ground beef, onions, 12 chopped tomato, spinach, thyme, pepper, and cheese. Mix well and form into 4 patties. Set aside.

3. In a small bowl, combine sour cream, cucumber, lemon juice, and 14 cup mint. Mix and set aside.

5. Spray a large skillet with nonstick cooking spray. Place the skillet over medium heat and add patties. Cook 5 minutes on each side or until cooked through. Patties also can be broiled or grilled.

6. Top with mint sauce, garbanzo beans and remaining chopped mint. Serve with the mixed green salad.

Makes 4 servings.
