Ingredients

4 cups or 1 recipe of Marinara Sauce

1 (10-oz) package frozen chopped spinach, thawed and drained

1 (14-oz) container extra-firm tofu, mashed

1 (13 34-oz) can artichoke hearts, water packed, drained, and finely chopped

2 tsp onion powder

1 tsp garlic powder

1 tsp oregano

1 tsp basil

1 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 cup dairy-free mayonnaise

16 jumbo pasta shells, cooked according to directions without salt or fat

Nonstick cooking spray

14 cup mozzarella cheese alternative, dairy and gluten free, crumbled

Directions

Preheat oven to 350°F.

1. Prepare Marinara Sauce recipe according to directions. Set aside.

2. Drain and press thawed spinach to remove excess liquid.

3. In in a large bowl, combine spinach, mashed tofu, artichoke hearts, onion powder, garlic powder, oregano, basil, salt-free seasoning, and dairy-free mayonnaise. Mix well.

4. Spray a 9 x 13 baking dish with nonstick cooking spray. Fill cooked pasta shells with tofu mixture and place upright in the dish. Pour marinara sauce around shells and cover baking dish with foil. Bake 30 minutes.

5. Top with crumbled cheese alternative. Cover and bake 15 minutes longer.
