Ingredients

Nonstick cooking spray

1 tbsp canola oil, divided

1 lb beef sirloin steak, boneless, cut across the grain into 14-inch strips

4 garlic cloves, minced

1 12 cups thinly sliced onion

1 12 cups thinly sliced red bell pepper

1 12 cups sliced green bell pepper

12 tsp salt

Dash pepper

12 cup chopped fresh parsley

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 12 tbsp canola oil. When oil is hot, add beef strips and stir-fry 4 to 5 minutes or until beef is cooked through. Remove beef from skillet. Set aside.

2. Add remaining 12 tbsp canola oil to skillet. When oil is hot, add garlic, onion, and bell peppers. Stir-fry 2 to 3 minutes until vegetables are tender.

3. Add beef strips back to skillet with the salt, pepper, and parsley. Cook and stir 1 to 2 minutes to heat through. Serve over hot brown rice.
