Ingredients

8 large Portobello mushrooms (5 inches to 6 inches in diameter)

Nonstick cooking spray

1 tbsp olive oil

2 minced garlic cloves

12 cup chopped onion

12 cup chopped red bell pepper

2 cups chopped zucchini

1 tsp dried basil

1 tsp thyme

1 tsp onion powder

1 tsp salt-free Mrs. Dash† Original Blend Seasoning

14 tsp salt

4 slices whole-wheat bread cut into small pieces to make bread crumbs

1 cup water

34 cup shredded, low-fat mozzarella cheese

12 cup crumbled feta cheese

1 cup brown rice, cooked according to directions without salt or fat

Directions

Preheat oven to 425°F.

1. Remove and chop mushroom stems. Set aside.

2. Spray a large baking sheet with nonstick cooking spray. Place the mushrooms on the baking sheet, smooth side down, and bake for 15 minutes.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When hot, add garlic, onion, and pepper. Sauté for 2 to 3 minutes.

4. Add the mushroom stems and zucchini. Sauté for another 3 to 4 minutes and add basil, thyme, onion powder, salt-free seasoning, salt, and bread crumbs. Mix well and add the water. Cover and cook 1 to 2 minutes. Remove from heat.

5. Remove mushrooms from the oven, turn them over and top each one with the vegetable mixture. Combine the mozzarella and feta cheese and evenly top each stuffed mushroom.

6. Bake for 10 to 12 minutes and serve immediately with hot rice.
