Ingredients

9 oz fresh spinach leaves

1 cup quinoa, dry (pre-washed)

2 peaches, pits removed, cut into 12-inch pieces

1 cucumber, cut into 12-inch pieces

1 avocado, cut into 12-inch pieces

12 cup sliced almonds

2 oz goat cheese, crumbled

112 TBS balsamic vinegar

3 TBS extra virgin olive oil

1 TBS honey

14 tsp salt

14 tsp pepper

Directions

1. Cook quinoa according to package instructions.

2. While quinoa is cooking, wash and drain spinach and prep fruit and vegetables. Once quinoa is cooked, turn off heat and let cool for 10 minutes.

3. In bottom of large mixing bowl, whisk together balsamic vinegar, extra virgin olive oil, honey, salt, and pepper.

4. Add spinach to bowl with dressing and top with cooled quinoa. Using tongs, toss spinach, quinoa, and dressing to combine. Top with peaches, cucumbers, avocado, almonds, and cheese, and toss once more to evenly distribute. Serve immediately.
