Ingredients

14 cup peanut butter, unsalted

14 cup hot water

2 tbsp white vinegar

2 12 tbsp honey

2 tbsp reduced-sodium soy sauce

14 tsp red pepper flakes

Nonstick cooking spray

1 tbsp canola oil

4 sliced green onions, tops included

1 cup sliced red bell pepper

14 oz firm tofu, cut into 34-inch cubes

4 cups chopped broccoli

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a bowl combine the peanut butter, hot water, vinegar, honey, soy sauce, and red pepper flakes. Mix well. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add the onions, pepper, and tofu. Sauté for 2 to 3 minutes.

3. Add the broccoli and sauté for 2 minutes.

4. Pour the peanut butter mixture over the vegetables and tofu. Cover. Cook for 3 to 4 minutes, or until vegetables are tender.

5. Serve over hot rice.
