Ingredients

2 cups 1% or nonfat milk

3 tbsp flour

14 tsp salt

12 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

14 tsp nutmeg

Nonstick cooking spray

2 tbsp olive oil

12 cup diced onion

12 cup diced celery

12 cup diced red bell pepper

12 cup frozen petite green peas

2 (6-oz) cans Albacore tuna, low sodium, drained, flaked

6 oz wide whole-wheat noodles, cooked according to directions without salt or fat

10 Wheat Thins† Reduced-Fat Crackers, crushed into crumbs

Directions

Preheat oven to 350°F.

1. In a small bowl, combine milk, flour, salt, salt-free seasoning, and nutmeg. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add olive oil. When oil is hot, add onion, celery, bell pepper, and mushrooms. Sauté 1 to 2 minutes.

3. Add peas and prepared milk mixture to the skillet. Stir with a wire whisk 2 to 3 minutes or until thickened.

4. Remove from heat and stir in tuna and cooked noodles. Mix well.

5. Spray an 8 x 8 baking dish with nonstick cooking spray. Pour the tuna mixture into the dish.

6. Top with crushed crackers. Bake 20 to 25 minutes.
