Ingredients

4 cups or 1 recipe Marinara Sauce

Nonstick cooking spray

2 tsp olive oil, divided

1 lb tuna steaks, cut into 4 portions

4 green onions, sliced with tops included

2 cups sliced mushrooms

2 cups sliced zucchini

2 cups sliced yellow crookneck summer squash

14 cup water

1 tsp oregano

1 (13 34-oz) can water-packed artichoke hearts, drained, sliced

8 oz whole-wheat fettuccini pasta, cooked according to directions without salt or fat

14 cup Parmesan cheese

Directions

1. Prepare Marinara Sauce according to directions. Set aside.

2. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 1 tsp olive oil. When hot, add tuna steaks and cook for 3 to 5 minutes on each side until cooked through. Remove from skillet. Set aside and keep warm.

3. Add remaining 1 tsp olive oil to the skillet and when hot, add the onions and mushrooms. Sauté for 2 minutes.

4. Add zucchini, squash, and water. Cover and cook for 3 to 4 minutes or until tender.

5. Add oregano, artichoke hearts, and Marinara Sauce to skillet. Cook for 2 to 3 minutes to heat through.

6. Serve tuna steaks with hot fettuccini pasta and vegetable mixture topped with Parmesan cheese.

Makes 4 servings.
