Ingredients

14 cup peanut butter, smooth, without salt

1 12 tbsp reduced-sodium soy sauce, divided

1 12 tbsp rice vinegar

2 tbsp honey

2 tsp fresh grated ginger

1 minced garlic clove

6 tbsp water, divided

1 tsp brown sugar

Nonstick cooking spray

1 14 lb tuna steaks, cut into 4 portions

14 cup chopped fresh cilantro

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. In a food processor or blender combine the peanut butter, 1 tbsp soy sauce, rice vinegar, honey, ginger, garlic, and 5 tbsp water. Blend until smooth and transfer to a small saucepan to heat later. Set aside.

2. In a small bowl combine remaining 12 tbsp soy sauce, brown sugar, and 1 tbsp water. Brush both sides of the tuna steaks with mixture. Set aside.

3. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add tuna steaks. Cook for 3 to 5 minutes on each side until cooked through.

4. Meanwhile, slowly warm the peanut sauce over medium-low heat. Stir in additional water, if needed, to desired consistency. Spoon sauce over tuna steaks and top with cilantro. Serve with hot brown rice.
