Ingredients

3 tbsp olive oil

6 tbsp red wine vinegar

14 cup lemon juice

2 tsp sugar

1 tsp onion powder

2 tsp salt-free Mrs. Dash† Lemon Pepper Seasoning Blend

2 (6-oz) cans tuna, Albacore, low sodium, drained and flaked

1 (13 34-oz) can artichoke hearts, water packed, drained, and chopped

1 (15-oz) can cannellini beans, drained

3 tomatoes, chopped

14 cup minced red onion

12 cup minced red bell pepper

1 cup chopped cucumber

14 cup chopped fresh parsley

12 cup sliced green pimento-stuffed olives

8 cups salad greens

1 avocado, sliced

1 cup carrot sticks

Directions

1. In a small bowl, combine olive oil, vinegar, lemon juice, sugar, onion powder, and salt-free seasoning. Mix well. Set aside.

2. In a large bowl, combine tuna, artichoke hearts, cannellini beans, tomatoes, onion, bell pepper, cucumber, parsley, and olives. Mix well.

3. Pour olive oil dressing over tuna mixture and toss to mix well.

4. Divide salad greens onto 4 dinner plates and top with tuna salad mixture. Arrange avocado and carrot sticks on the side of each salad.
