Ingredients

Nonstick cooking spray

1 tbsp canola oil, divided

1 lb turkey breast cutlets

10 sliced green onions, tops included

1 cup chopped red bell pepper

1 chopped apple

1 cup reduced-sodium chicken broth

1 12 tbsp brown sugar

1 tsp cinnamon

12 tsp allspice

12 cup raisins

1 cup brown rice, cooked according to directions without salt or fat

Directions

1. Spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add 12 tbsp canola oil. When hot, add the turkey cutlets and cook 5 to 6 minutes on each side or until cooked through.

2. Remove turkey cutlets from the skillet. Set aside. Keep warm.

3. Add the remaining 12 tbsp canola oil, onions, and pepper. Sauté for 1 to 2 minutes.

4. Add the chopped apple, chicken broth, brown sugar, cinnamon, allspice, and raisins. Bring to a boil. Reduce heat slightly and simmer for 3 to 4 minutes.

5. Add the turkey cutlets back to the skillet to heat through.

6. Serve cutlets with hot rice and spoon the apple-raisin sauce over the top.
