Ingredients

Recipe for Seasoned Mashed Potatoes

Nonstick cooking spray

1 tbsp canola oil

1 lb turkey breast cutlets

12 cup reduced-sodium chicken broth

14 cup marsala dry cooking wine

14 cup chopped fresh parsley

Directions

1. Prepare Seasoned Mashed Potatoes recipe according to directions.

2. Meanwhile, spray a large skillet with nonstick cooking spray. Place the skillet over medium-high heat and add canola oil. When hot, add turkey breast cutlets and cook 2 to 3 minutes on each side to brown.

3. Add to the skillet the chicken broth, wine, and parsley.

4. Reduce heat to low. Cover. Simmer for 10 to 12 minutes until turkey is cooked through.

5. Spoon sauce over the top of the cutlets and serve with seasoned mashed potatoes.

Makes 4 servings.
